Good catch. Unfortunately when the Schwarzbein books were written I was not as informed about soy as I am today. That is why I do not promote the vegetarian book on my website. There are lots of other recipes in that book that are healthy.

I have been a vegetarian for almost a year now. I don't believe in eating animals for food. I believe it is cruel to raise an animal and then kill it just to feed yourself. I eat tofu and drink one to two glasses of low fat vanilla soy milk a day. I don't eat tofu everyday. I try to eat fruits and veggies and whole grains, but I do eat out a lot because I get tired of cooking. Cooking vegetarian requires a lot of prep time with cutting, chopping, mincing etc. Anyhow, since I don't want to drink milk and eat meat, how can I eat more healthfully without spending so much time in the kitchen prepping the veggies? By the way, my husband and daughter are not vegetarian. They eat what they want. We don't eat meat at home, but they will eat it when we eat out. I have also taken to buying organic skim milk for them to drink. I don't drink milk at all. Also, buying organic produce is expensive as all get out! I simply cannot afford to buy organic all the time. Please give me your thoughts on how to eat healthfully without eating meat and drinking milk. Thanks.

Hi Kris,
First, please consider eliminating all industrialized soy. It is filled with aluminum, fluoride, chemical solvents and other toxins. Historically humans ate tiny amounts (about 2 tsp per day) of naturally fermented soy. The fermentation process eliminated or at least dampened some of the naturally occuring toxic properties of the soybean. We already have a lot of estrogen in our environment in the form of plastics, VOCs, pesticides and so on. So we are exposed constantly to xenoestrogens, which put us at high risk of cancer and hypothyroidism. Clearly no one wants cancer but hypothyroidism is also a horrible condition that condemns people to a lifelong struggle with weight, hair loss, low sex drive, depression and numerous other unpleasant symptoms. A constant onslaught of estrogen depresses and can even permanently damage the thyroid. So if you are looking for other sources of protein then you must learn all the nut combinations and rice and bean combinations that give you a complete protein. These combos are generally high in carbohydrate so you then need to modulate your exercise accordingly. You might want to find a farm or ranch that raises and  grazes happy chickens and cows and consume those eggs and milk—preferably raw milk foods. It is best for your husband and daughter to eat animal foods at home  because generally speaking restaurants use the cheapest (i.e. cruelest) types of animal products.  At home you have a say in how the animal you are eating was raised and slaughtered.

Now about the chopping and mincing. You can buy the Vitamix 5200 which is the best juicer on the market. It virtually pulverizes the entire plant and so you get the all the fiber as well as the juice. Because the nutrition in plants and fruits is locked behind hard cellular walls then you have to chew very well, cook your produce (which eliminates some of the nutrional value) or juice to release the nutrition. I choose juicing myself. The Vitamix 5200 is pricy but so worth it if you amortize the times you are going to use it. Clean up is like cleaning up a blender. If you can’t afford organic produce then fill up your kitchen sink with water (preferably you will have put a filter on your sink to filter out fluoride which kills cells). Add 2 tablespoons of CLOROX (not any other type of bleach because Clorox does not contain chlorine) and soak and swish for about 15 minutes. Rinse well. This will eliminate some, but not all, pesticides. Pesticides are xenoestrogens, and are the cause of our rise in breast and other cancers.

I've been reading Death by Supermarket, and while I'm only about 150 pages in, I just wanted to offer a few quick comments.  First, I wanted to thank you for your very timely and thorough efforts. While the book is horrifying, it's already put me on the road reevaluating what I eat and to making more informed choices.

In addition to offering my thanks, I would like to offer one constructive comment.  Throughout the book "empirical research" is continually equated to "anecdotal evidence" (e.g., pp. 52, 68, 106, 121, 129, 131).  If I'm understanding correctly, I believe this is a miscategorization. While empirical research relies on observations of test subjects, it is actually methodologically rigorous research that forms the basis of the peer-reviewed, double-blind studies to which you separately refer. Anecdotal evidence is simply that -- evidence derived, essentially, from single observations (e.g., individual patient anecdotes).  As an example of this usage in the book, page 106 refers to "empirical evidence" (which is actually anecdotal) from Dr.  Daniel's patients that encouraged her to complete what appears to have been a controlled,  empirical study.

this is not an easy task. the   deck is stacked against many of us. even to attempt a lifestyle  change is a  definite uphill battle.

i remember eating food ...god  knows what it is  anymore. money is king to all these outfits producing  and prossessing what is  known as food. and i  am not too thrilled  with the whole foods markets  either...mainly becoz i am sketical if   even they have the people best  interest at heart.

i  understand what you are saying we need a  solution...but to befrank about it we are in the last days of the world (this  world) and the  test is all that matters at this point anymore. i truly believe  that  there is no "winning" anymore on this marble as a complete race of beings...

We do live in a toxic wasteland and we have to make our own choices. This is what I meant about the division of the classes occurring that has less to do with money than personal choice. That said, not everyone who chooses to live a healthy life will escape disease. We have our government, the American Heart Association, the FDA and other health agencies to blame for allowing toxins to permeate our environment and for giving us terrible advice. That said, we can do our best to eat real, historically eaten food and enjoy life.

I enjoyed your talk on wrln 93.1. i missed most of it but i thought you sais soy milk wasn't any good is this right??? I think your on the right track but i wonder about eating cheese and fats when I have cholestrol problems.

You are correct. Soy contains many anti-nutrients and natural toxins and then it is processed with chemicals. If you want to eat soy, eat it the way Asians ate it: 2 teaspoons per day of naturally fermented soy such as natto, tempeh, miso and shoyu.

The cholesterol/heart disease hypothesis was just a hypothesis (a base from which further study could take place). However, it has never been proven and in fact has been disproven over and over by researchers across the globe. Depriving an entire nation of cholesterol has resulted in mass decline of health. This is one subject Americans need to become educated about. You will be hearing more about this in the media in the near future and not just from me.
